ENCHILADAS – MY VERSION

Brown 1 lb 97% ground beef
Add 3-4 cloves of minced garlic
1 chopped green pepper
1/2 diced med onion
1 small can mild enchilada sauce & 1 large can of enchilada sauce
Add 1 can drained black beans
Cook on medium heat with cover until pepper & onion are cooked

Spray 9 x 13 cake pan with vegetable spray
Add enchilada sauce from large can to cover bottom of pan

Fill small taco shells 1/3 of the way with meat mixture & put side by side in pan
Finish by filling pan with as many shells as the pan will hold
Add rest of enchilada sauce

Cover with 2 cups grated Mexican style cheese or mozzarella

Bake 40 min in 350 degree oven
