TWICE BAKED POTATOES

Bake 4 russett potatoes

When cooled scoop out middle being careful not to break the shells

Mix together until blended –
Softened cream cheese, a little milk or half & half, grated cheddar cheese, 1 cup sour cream or plain nonfat yogurt, chopped scallions, salt & pepper

Fill shells with mixture & bake at 400 degree oven until browned
