STUFFED SHELLS

1 lb Ricotta cheese (Sorrento or Poly-o)

2 eggs

Handful of grated Pecorino cheese

Few dashes of ground mint

Approx 1-2 Tbls sugar

Mix well.  In salted water cook jumbo shells or manicotti shells until done, drain

Stuff macaroni with cheese mixture

Spray pan that’s being used for shells with cooking spray

Cover bottom of pan with sauce, stuff shells & layer until pan is full covering each layer with sauce

Cover top with more sauce.  Grated mozzarella can be added to top

Bake 350 degree preheated oven for approx 45 min to 1 hour or until cheese mixture has stiffened.

If top is cooking too fast could cover lightly with tin foil
