LEMON MERINGUE PIE

PIE CRUST (1)

1 stick of softened butter
Few shakes of salt
1 cup flour
Mix all together with a little cold water & fit into a 9” pie pan
Bake at 375 degree oven for approximately 25 minutes or until edges become browned
Put a pie of parchment paper inside pan, layer with beans before baking the crust to stop bubbling

FILLING

In a medium saucepan whisk together 1 cup sugar, 2 Tbls flour, 3 Tbls cornstarch, 1/2 cup fresh squeezed lemon juice, 1 1/2 cup water. Cook on med high heat until thick, add 2 Tbls butter. When melted add 1/2 cup of the mixture to 4 egg yolks, stir, then add yolks to sugar mixture & cook until thickens. Pour into cooled cooked pie crust

MERINGUE

Beat 4 egg whites until fluffy, adding 6 Tbls sugar, a little at a time, until forms soft peaks. Spread over top of pie & bake in 350 degree oven for approx 10 min until meringue is slightly browned

When completely cooled put in refrigerator
