CHEESECAKE

1 1/3 cup graham cracker crumbs

1/4 cup sugar

6 Tbls melted butter.  Mix well & press into bottom & half way up the sides of a springform pan

2 pkgs cream cheese

1 cup sugar

1 tsp grated lemon rind

3 eggs

2 Tbls sugar

1/2 cup sour cream

1 tsp vanilla

Preheat oven @ 300 degrees & bake for 1hr.

In a large bowl beat cream cheese until smooth, add sugar & beat until fluffy.  Add lemon rind, add eggs one at a time & beat until blended.  Pour into a springform pan.  Turn off oven & leave door open for 30 mins.  Combine sour cream & 2 Tbls sugar & vanilla.  Carefully spread over cheesecake, return to oven for 30 mins with oven door till open.  Do not reheat oven.  Remove from oven, cool & refrigerate for at least 3 hours or overnight.  Garnish with fruit or any canned pie filling and whipped cream
