Mexican Wedding Cake

2 cups butter, softened
1 cup confectioners’ sugar
1 teaspoon vanilla extract
Mix together, then add-

2 cups flour, beat with beater then add another 2 cups of flour & finish mixing by hand until dough pulls away from the sides of the bowl (approx 4 cups flour total)

Then add:

1 cup finely chopped walnuts or pecans

 Might need to add additional confectioners’ sugar


Bake @ 350 degree oven on ungreased cookie, 2” apart


Bake until light brown, 12-15 minutes. Roll cookies in additional confectioners’ sugar while warm; cool on wire racks
