- 1 large egg
- 1/3 c. all-purpose flour, plus more as needed
- 1/2 tsp. kosher salt, plus more for sprinkling
- 1/4 tsp. ground black pepper
- 1 c. shredded cheddar cheese
- 2 finely chopped green onions, plus more for sprinkling
- 1 c. panko breadcrumbs
- Vegetable oil, for frying
- Sour cream, to serve
- Mix all together & fry until crispy on both sides
- Drain the pancakes on paper towels and sprinkle with salt. Serve hot, with a sprinkle of green onion and a dollop of sour cream
