MASHED POTATO PANCAKES

  • 1 large egg
  • 1/3 c. all-purpose flour, plus more as needed
  • 1/2 tsp. kosher salt, plus more for sprinkling
  • 1/4 tsp. ground black pepper
  • 1 c. shredded cheddar cheese
  • 2 finely chopped green onions, plus more for sprinkling
  • 1 c. panko breadcrumbs
  • Vegetable oil, for frying
  • Sour cream, to serve
  • Mix all together & fry until crispy on both sides
  • Drain the pancakes on paper towels and sprinkle with salt. Serve hot, with a sprinkle of green onion and a dollop of sour cream
