MANGO PRESERVES

  • 4-5 cups fresh mango, peeled, pitted and cut into small pieces
  • 3 cups white granulated sugar
  • 1 tsp lime zest
  • 3-4 tbsp lime juice 
  • pinch of salt
  • Bring to a boil, lower heat, crush fruit as best as you can, keep stirring until sheeting on spoon

This makes approximately 2 cups

Can finish in hot water bath or frozen in individual jars
