Cucidati (Italian Fig Cookies)

COOKIE DOUGH

4 c flour

1 1/2 tsp baking powder

1 T vanilla

3 eggs

1 cup sugar

2 sticks softened butter

Cream butter with sugar

Add remaining ingredients & mix well

Roll out dough to approx 1/4” thick.  Put a line of fig filling along a row of dough approx 1” in from side.  Flip dough to cover fig filling.   Pat dough around filling, cut along side, crimp with fork & cut out the cookie about 1” wide.  Repeat until dough is gone.

FIG FILLING

1 lb dried figs boiled with 2 c water,  1 c dark brown sugar.    Cook until soft.   Put in blender with 1/4-3/4 tsp ground cloves, some minced walnuts & 1 large scoop of orange juice concentrate or grated rind from an orange & it’s juice

Can use raisins or dates if don’t have enough figs

Bake @ 350 degree oven approx 10 mins or until bottoms are browned

ICING

Mix confectioner’s sugar with water & lemon juice, mix until smooth & thick.  Drizzle on cooled cookies & sprinkle with colored jimmies
