RISOTTO

3 1/2 c chicken broth

1 cup risotto (ariboro rice)

2 T chopped onion

2 T minced garlic

2 T butter

Mix well & microwave 18 minutes stirring 1/2 way through

Add frozen peas & cut up shrimp & cook another 4 minutes or until shrimp is cooked

Stir, add pecorino cheese & sprinkle fresh or minced parsley on top
