How to make Streusel
- 3/4 cup flour *all purpose
- 3/4 cup white sugar
- 1/2 cup brown sugar
- 2 tablespoon cinnamon
- 1 cup pecans *chopped
- 2 tablespoon unsalted butter *cut into cubes, cold
- In a bowl, whisk together the flour, sugar, brown sugar, and ground cinnamon
- Add in the cold butter and cut it in using a pastry blender or two forks until coarse crumbs form
- Stir in the crushed walnuts or pecans
- Set bowl aside.
Coffee Cake
- 1 cup applesauce unsweetened
- 1 1/2 cups sour cream
- 2 eggs
- 1 tablespoon vanilla extract
- 1/2 cup unsalted butter softened
- 1/2 cup sugar
- 2 1/4 cup flour all purpose
- 1 tablespoon baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- Preheat oven to 350 degrees and grease a 9×13 baking dish with non-stick cooking spray
- In a small bowl, combine the applesauce, sour cream, and vanilla, set aside
- In a separate small bowl, combine the flour, baking powder, baking soda, and salt, set aside.
- In a medium mixing bowl, cream the butter and sugar using an electric mixer or stand mixer until smooth and creamy
- Add in the eggs stirring until just combined
- Slowly add in the dry ingredients mixture and applesauce mixture stirring until just combined
- Pour 1/2 batter into prepared pan followed by 1/3 of the streusel mixture
- Pour remaining batter on top followed by remaining streusel
- Place baking pan into preheated oven and bake for about 35-40 minutes, or until cake feels firm in the center and toothpick comes out clean when inserted into center of cake
- Remove from oven and allow to cool slightly before serving
