1 egg in a kettle
1 rounded t sugar
1/3 c cornstrch
Juice & rind of 1 lemon
Mix & dissolve
Add 1 1/2 c milk, cook over low heat
put plastic wrap around it inside the kettle to prevent a skin to form, cool
In another bowl add 2 eggs
2/3 cup of sugar
1 t sugar & 1 tsp vanilla
4 oz of sesame oil or any seed oil & mix
Add 6 1/2 c flour
A little more than a T of baking powder & mix
Put 1/2 of the batter in a sprayed springform pan
Cook for 15 min in a preheated 375 degree oven
Spread lemon pudding mixture on top
Add the rest of the batter spread evenly over the lemon pudding & cook again at 375 degree
oven for 25 min
When cooled open pan & put cake in dish
Brush the top with jam & coconut & cover with sprinkled confect sugar
